Dr. Ashley Ramirez, a health-conscious and community-minded entrepreneur, founded Mason Dixon Bakery and Bistro. While attending Elon University, Dr. Ashley Ramirez discovered she had Celiac Disease. When I started graduate school at Duke University, the transition to a gluten-free lifestyle became difficult. She had to learn how to cook and bake gluten-free not only on a budget, but also with limited resources. Soon after, she began putting her PhD Chemistry knowledge and habits to use in recipe development and food experimentation. Frustrations quickly turned into challenges, and challenges led to breakthroughs. Her recipes soon fooled even the harshest critics.
